Quinoa & Red Pepper Tabbouleh
This amazing Mediterranean salad is an amazing lunch or a perfect way to add colour to your meals as an alternative to rice!
Ingredients
1 Red Pepper
1/2 Red Onion
10g Fresh Parsley
Lemon
Pinch of Salt & Pepper
100g Quinoa
Toasted Pumpkin Seeds
Method
Finely dice the red pepper, red onion and parsley and place into a bowl.
Slice your lemon in half and squeeze the juice over the pepper, onion and parsley .
Cook all the quinoa on a gentle simmer for 5 minutes whilst stirring.
Bring the quinoa off the heat and season with the salt and pepper.
Mix everything together and add more seasoning if you wish.
Finish by adding toasted pumpkin seeds.
This Tabbouleh can be enjoyed by itself or is a perfect accompaniment to any dish.
