Banana and Oatmeal Cookies

If you're looking for a vegan and healthy dessert option, these banana oatmeal cookies are perfect! They are easy to make and only require a few ingredients.

Ingredients:

  • 2 ripe bananas

  • 1 1/2 cup rolled oats

  • 1/4 cup almond flour

  • 1/4 cup maple syrup

  • 1/4 cup almond milk

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • 1/4 tsp salt

  • 1/2 cup vegan chocolate chips

Instructions:

  1. Preheat your oven to 350°F.

  2. In a large mixing bowl, mash the ripe bananas until there are no large chunks.

  3. Add the rolled oats, almond flour, maple syrup, almond milk, vanilla extract, cinnamon, and salt to the bowl with the mashed bananas. Stir until all ingredients are well combined.

  4. Fold in the vegan chocolate chips.

  5. Using a spoon or a cookie scoop, drop the cookie dough onto a lined baking sheet.

  6. Bake for 15-20 minutes, or until the cookies are golden brown.

  7. Remove from the oven and let them cool for a few minutes before transferring to a wire rack to cool completely.
