Chia and Vanilla Pudding with Blueberries.

Mmmm! Sounds delicious, doesn’t it? This particular recipe is one of my all time favourites, the texture and taste always leaves me wanting more, plus it’s filled with extreme nutritional goodness.
What are Chia Seeds? Oh, these goodies are little powerhouses of nutrition and full of Omega 3’s and 6’s, which aid our brain function. They are essential fatty acids, and as with most things, these are always best consumed through food rather than supplements. Kick-starting your day with this breakfast will have a profound effect on your health, is like a soul-food for our digestion. Oh and not only that, this particular recipe that I’m sharing with you is sure to boost your energy and concentration at work. #WINNING

You can add chia seeds to smoothies, or as we do here, soak them in nut milk so that they swell and create a pudding texture.

  • Cuisine: Breakfast
  • Preparation Time: Minimum 4 hours to maximum overnight
  • Total time: Overnight plus 10 minutes
  • Servings: Makes 2 servings

  • Requires: Mixing bowl, spoon

Ingredients

Method

  • Add your lucuma and vanilla powder into your almond milk
  • Soak your chia seeds in your homemade almond milk for around 2-4 hours (or overnight, if preparing the night before)
  • Once all soaked spoon all of this into a glass or bowl and top with fresh blueberries and chopped apple

Et Voila – the perfect breakfast!
